docs: Update README with animated GIF demos

Browse Source

- Replace static PNG screenshots with animated GIFs
- Add Feature Highlights section with 5 demos:
  - Topology analyzer, link quality polar, stats dashboard
  - Path tracing, themes & terminal
- Remove stale image references
- Reorganize features into highlights + detailed sections
