Maintain symlinks of the latest log file under something along the lines of a _current tag

ex: ~/.znc/users/freenode/moddata/log/default_#znc_current.log -> ~/.znc/users/freenode/moddata/log/default_#znc_20141204.log

and update the link on rotate, leaving a singular point to get the latest log file for a particular channel
