Some text like Mgmt > Stats > Noise Floor is actually clickable to see an awesome graph! I only figured that out because I tapped on it by accident. I think clickable elements should indicate they are a button, for example with a rectangle around it, or some small icon in front or behind the text.

how would it be with "a button" and as text of the button the value on the right? that would be the most "common" what is used in the firmware? but, let me know what you think - i like also both of your ideas :D

I can't draw buttons here in text in GitHub, but I mean that adding a square with an arrow in it after the value would indicate that there is more information to be found by tapping that "line" (name of the metric, the value, and the "button"). A bit like how you can see there is a submenu in Android settings menus

Mgmt->Tele tap on vBAT volts takes you to edit node name
UI Zoom could be ^ and v instead of tap many times to get back to 100

would it be enough to add a Button "Live" on the right side of the value to see that there is a function behind?
Button with 'F' for function would work
Maybe a box with an arrow might do it? Something like: [>]

Whatever is logical and doesn't clutter up the UI since it's so clean and neat now ;>)
